Oat Tahini Balls

If you need something sweet to tide you over between meals but don't want to blow your calorie budget, these oat snacks are the perfect solution. These bite-sized sugar-free and high in protein snacks are quick and easy to make. They will keep for a week in an airtight container in the fridge but I think they taste nicest at room temperature; just let them defrost a bit before eating.

Oat Tahini Balls

Ingredients:

  • 3 cups of gluten-free quick oats
  • 1/4 cup of tahini
  • 1/4 cup of sugar-free maple syrup
  • 3 tablespoons of Chia seeds
  • 1 small banana, mashed
  • 4 tablespoons of dessicated coconut, plus extra for rolling
Method:
  1. Mix all the ingredients together in a large bowl.
  2. Using a tablespoon, scoop out a spoonful of the mixture and roll into a ball. Coat the balls in the dessicated coconut (I cover a plate in a layer of coconut and roll each ball in the coconut to coat) and place on a plate to set.
  3. Let the oat balls sit for a few minutes and then transfer into a container to store.
Makes 20 balls.
