the stress connection


Modern medicine, which once treated the connection between emotions and physical health with skepticism, has come to appreciate the closely linked relationship of mind and body. A wide variety of maladies, including stomach upset, hives, and even heart disease, are linked to the effects of emotional stress. But although the relationship between stress and immune function is being studied by a number of different types of scientists, so far it is not a major area of research for immunologists.

Studying the relationship between stress and the immune system presents difficult challenges. For one thing, stress is difficult to define. What may appear to be a stressful situation for one person is not for another. When people are exposed to situations they regard as stressful, it is difficult for them to measure how much stress they feel, and difficult for the scientist to know if a person’s subjective impression of the amount of stress is accurate. The scientist can only measure things that may reflect stress, such as the number of times the heart beats each minute, but such measures also may reflect other factors.

Most scientists studying the relationship of stress and immune function, however, do not study a sudden, short-lived stressor; rather, they try to study more constant and frequent stressors known as chronic stress, such as that caused by relationships with family, friends, and co-workers, or sustained challenges to perform well at one’s work. Some scientists are investigating whether ongoing stress takes a toll on the immune system.

But it is hard to perform what scientists call “controlled experiments” in human beings. In a controlled experiment, the scientist can change one and only one factor, such as the amount of a particular chemical, and then measure the effect of that change on some other measurable phenomenon, such as the amount of antibodies produced by a particular type of immune system cell when it is exposed to the chemical. In a living animal, and especially in a human being, that kind of control is just not possible, since there are so many other things happening to the animal or person at the time that measurements are being taken.

Despite these inevitable difficulties in measuring the relationship of stress to immunity, scientists who repeat the same experiment many times with many different animals or human beings, and who get the same result most of the time, hope that they can draw reasonable conclusions.

Some researchers place animals into stressful situations, such as being trapped in a small space or being placed near an aggressive animal. Different functions of their immune systems, and their health, are then measured under such stressful conditions. On the basis of such experiments, some published studies have made the following claims:

* Experimentally created “stressful” situations delayed the production of antibodies in mice infected with influenza virus and suppressed the activity of T cells in animals inoculated with herpes simplex virus.
* Social stress can be even more damaging than physical stress. For example, some mice were put into a cage with a highly aggressive mouse two hours a day for six days and repeatedly threatened, but not injured, by the aggressive mouse — a “social stress.” Other mice were kept in tiny cages without food and water for long periods — a “physical stress.” Both groups of mice were exposed to a bacterial toxin, and the socially stressed animals were twice as likely to die.
* Isolation can also suppress immune function. Infant monkeys separated from their mothers, especially if they are caged alone rather than in groups, generate fewer lymphocytes in response to antigens and fewer antibodies in response to viruses.

Many researchers report that stressful situations can reduce various aspects of the cellular immune response. A research team from Ohio State University that has long worked in this field suggests that psychological stress affects the immune system by disrupting communication between the nervous system, the endocrine (hormonal) system, and the immune system. These three systems “talk” to one another using natural chemical messages, and must work in close coordination to be effective. The Ohio State research team speculates that long-term stress releases a long-term trickle of stress hormones — mainly glucocorticoids. These hormones affect the thymus, where lymphocytes are produced, and inhibit the production of cytokines and interleukins, which stimulate and coordinate white blood cell activity. This team and others have reported the following results:

* Elderly people caring for relatives with Alzheimer’s disease have higher than average levels of cortisol, a hormone secreted by the adrenal glands and, perhaps because of the higher levels of cortisol, make fewer antibodies in response to influenza vaccine.
* Some measures of T cell activity have been found to be lower in depressed patients compared with nondepressed patients, and in men who are separated or divorced compared with men who are married.
* In a year-long study of people caring for husbands or wives with Alzheimer’s disease, changes in T cell function were greatest in those who had the fewest friends and least outside help.
* Four months after the passage of Hurricane Andrew in Florida, people in the most heavily damaged neighborhoods showed reduced activity in several immune system measurements. Similar results were found in a study of hospital employees after an earthquake in Los Angeles.

In all of these studies, however, there was no proof that the immune system changes measured had any clear adverse effects on health in these individuals.

Oktoberfest German apple cake recipe

I went to Oktoberfest with my friends, and whilst I am sure it wasn't as exciting as attending the festival in it's original birth place, we had a great time. I took home this sweet momento - although I heard from a reliable source that it tastes rather like cardboard. Click here for my low-fat gingerbread cookie recipe to make your own cookies for the season. Although, I do like this one for decoration :)

To celebrate the German holiday, here is a recipe for a delicious traditional German apple cake.










German Apple Cake - taken from All Recipes

Ingredients
  • 2 eggs
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 4 cups apples - peeled, cored and diced

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch cake pan.
  2. In a mixing bowl; beat oil and eggs with an electric mixer until creamy. Add the sugar and vanilla and beat well.
  3. Combine the flour salt, baking soda, and ground cinnamon together in a bowl. Slowly add this mixture to the egg mixture and mix until combined. The batter will be very thick. Fold in the apples by hand using a wooden spoon. Spread batter into the prepared pan.
  4. Bake at 350 degrees F (175 degrees C) for 45 minutes or until cake tests done. Let cake cool on a wire rack. Once cake is cool serve with a dusting of confectioners' sugar.

Gwyneth's Blueberry Muffins

Makes 12

INGREDIENTS

* 1/2 cup vegetable oil
* 1/2 cup soymilk
* 1/2 cup pure maple syrup
* 1/4 cup light agave nectar
* 1 cup white spelt flour
* 1 cup whole spelt flour
* 2 teaspoons baking powder
* 1/2 teaspoon salt
* 2 1/2 cups fresh blueberries

PREPARATION

1. Heat oven to 375°. Line a 12-cup muffin pan with paper liners. Whisk oil, soymilk, syrup and nectar in a bowl. Combine flours, baking powder and salt in another bowl. Stir wet ingredients into dry ingredients; fold in blueberries. Divide batter evenly among muffin cups. Bake until muffins are golden brown and a knife comes out clean, 25 to 30 minutes. Serve warm.

In case you want to know the stats: 221 calories per muffin, 10 g fat (1 g saturated), 32 g carbs, 2 g fiber, 3 g protein.

chocolate tofu cheesecake


You have to try this recipe; don't be afraid of the tofu! Tofu has a very light taste, which is why it lends itself to other flavours so well. It's creamy texture is perfect for cheesecake recipes, with the added bonus of being packed with protein and free of lactose.

could gluten-free be the answer?


A gluten-free diet is a diet that excludes foods containing gluten, a protein found in wheat (including kamut and spelt), barley, rye, malts and triticale. It is used as a food additive in the form of a flavoring, stabilizing or thickening agent, often as "dextrin". While a gluten-free diet is the only medically accepted treatment for celiac disease, the diet is also helpful for those with a sensitive stomach.

If you frequently fall victim to stomach cramps or symptoms of irritable bowel syndrome, it can be helpful to eliminate gluten from your diet. Even if you do not have celiac disease (which means your body is intolerant to gluten), your body may still be unable to digest gluten. In fact, all bodies find it difficult to digest gluten.

The presence of gluten is what allows bread to expand and become bread; this is due to its very high content of the sulphur containing amino acid cystine, which gives gluten its elastic and expandable qualities. It is, however, this exact trait that also makes gluten very difficult to digest. If a person's digestive system is the least bit compromised, it is very likely that the gluten will not be fully digested and be allowed to pass through to the intestines, where undigested proteins are the perfect nourishment for bad, putrefying bacteria.

Because of the physical nature of gluten, it is an especially unfavorable substance to have in the intestines. It has a tendency to stick to the walls and combine with another hard to digest protein, casein. The two proteins can form an adherent mass on the intestinal walls that makes absorption of essential nutrients problematic, if not impossible. It can also make the passage of waste material extremely difficult (constipation) contributing to overall body and bowel toxicity. This intestinal build-up can put an enormous toxic burden on the body, making it vulnerable to an infinite amount of chronic conditions.

While the jury is still out on the villainous characteristics of gluten, if you suffer from stomach pain, an elimination diet can be worth a try. Take out gluten from your diet for two weeks and see if your condition improves. Remember gluten is not just in bread, but in pastas, sauces, candies and baked goods. Read the label to make sure you are not accidentally consuming any gluten.

I've tried many different gluten-free products and I must admit that some of them really are compromised in flavour. Melinda's brownies are definitely not lacking in taste and I would go as far as to say, they are better than the original version. I improvised on the ingredients to add (as I so often do) by using half the amount of butter (organic always) and substituting the other half with quarter of a cup of low-fat soy milk. I also added 1 tablespoon of natural peanut butter for added punch. I didn't melt the chocolate included as directed but instead folded through half of the chocolate before pouring into the tin. I prefer bits of chocolate rather than it get lost in the cake, however, if you like your brownies very fudgy, I would melt the chocolate first.

Skinny muesli muffins


The perfect mix of protein and carbs, these muffins pack a punch of vitamins and minerals. They are very versatile and feel free to come up with your own combinations, whether it be adding fruit (dried or fresh), spices and different cereals.

Ingredients:

1.5 cups of muesli (I use one with bran flakes, rice flakes, seeds and dried fruit)
1 cup of self raising flour (wholemeal or unbleached white)
2 tablespoons of honey
1 tablespoon of organic peanut butter
0.5 cup of low-fat soy milk
1 egg
Extra muesli for topping

Directions:


Mix the muesli and flour together, and make a well in the centre. Add the peanut butter, honey, egg and milk and mix until combined. Oil the muffin cups and put two spoonfuls of mixture in each. Sprinkle each finished muffin with muesli. Bake in a moderate oven (180 degrees) for 20 minutes, or until browned on top and cooked through. Turn out onto a wire rack to cool. Serve with honey.
